pumpkin waffles

Taking into account my love for waffles and all things pumpkin, it’s only natural for pumpkin waffles to top my list of favorite fall foods. This is a revised Weight Watchers recipe I found while browsing the Weight Watchers Kitchen Companion App for iPad. I used whole wheat pastry flour in lieu of white flour, pumpkin pie spice as a substitute for the cinnamon and nutmeg, white sugar rather than brown sugar, 1/4 cup additional fresh pumpkin in place of the oil and a 1/4 cup less buttermilk than the original recipe called for.  The pumpkin spice aroma that fills the kitchen while making these waffles is as delightful as indulging in the waffles themselves. :) Enjoy!
