They say the way to a man’s heart is through his stomach, so it’s no surprise I won my husband over that way! Shortly before we were married I asked my husband how he knew I was the one… his response “your cookies”. I have tweaked my recipe over the years, but the base for my recipe is the Cookies in a Jar recipe on About.com. I always under bake my cookies which makes these the softest, chewiest, most decadent chocolate chips cookies I’ve ever made. Enjoy!
Ingredients:
2 Sticks Butter, Softened
1 Large Egg
1 Tsp Vanilla Extract
1 Cup Whole Wheat Pastry Flour
1 Cup Unbleached White Flour
¾ Cup Sugar
¾ Cup Brown Sugar
1 Tsp Baking Soda
1 Tsp Salt
½ Bag Ghirardelli 60% Cocoa Bittersweet Chocolate Chips
Instructions:
Preheat oven to 375 degrees.
Soften the butter.
Add egg and vanilla to softened butter. Using a hand mixer beat until creamy.
Add flour, sugar, baking soda and salt to butter mixture. Beat until well blended.
Using a spoon, stir in chocolate chips.
Place level cookie scoops full of batter on cookie sheet and bake 8 minutes. Remove cookies from oven and let stand on pan about 1 to 1 & ½ minutes.
Using a spatula, transfer cookies to paper towels (or a rack) to cool.
Yields 34 Cookies
